Banh chung is a traditional dish during Tet, but not everyone knows how to cut the cake into even, sharp pieces without bulging or bursting the filling.
How to cut banh chung with bamboo strips:It is a traditional cutting method that shows beauty, sophistication and makes use of available materials.
Making:
Gently remove the cake from the leaves, choose strong and tough strings, clean them and then strip them into 4 small, even strings. Place 2 strings in the middle to form 4 squares, then place 2 straight diagonal strings connecting the 4 corners of the cake to divide the whole into 8 pieces. Remember to mark which strings to place first and which to place later in the order 1,2,3,4 so that when cutting, it is convenient to tie knots at the ends of the strings.
Press the bamboo strips firmly onto the banh chung to shape it. Place a flat plate on top and turn it upside down, peel off the leaves along the other side. Be careful not to peel the leaves horizontally as this can easily get leaf crumbs on the cake.
Tie the bamboo strips from the outside to the inside in order 1,2,3,4 to cut into even pieces.
Finally, use your hand to hold and press the sticky end of the string onto the banh chung and then gently pull it out horizontally. Be careful not to lift the string up too high as it can easily pull the meat filling out.

Use a sharp knife, longer than the cake, then wrap plastic wrap 2-3 times around the knife (to avoid tearing when cutting).
Then, gently cut 4 horizontal, vertical, and diagonal lines to divide the cake into 8 equal parts.
Finally remove all the plastic wrap and the knife will be clean.
The advantage of this method is that it is quick and easy, taking less time than cutting with bamboo strips, the cake pieces are even, the filling does not burst or protrude. Be careful not to use a small, short or blunt knife, as you will have to cut back and forth, causing the cut to be thick or not completely cut, making the cake lose its aesthetic appeal.
