The following measures will help you preserve banh chung and banh tet longer after Tet.
One of the dishes that has a strong Tet flavor is banh chung and banh tet. Do you know how long these cakes can be kept?
Normally, if you put the cake in a dry, cool place, away from direct sunlight, it will last for 2-3 days. In particular, you should hang the banh chung and banh tet to help the temperature dry better.
If you are worried about insects eating it, you can put it in the refrigerator to extend the shelf life from 10 to 15 days. When eating, just take it out and steam it until it is soft and chewy like new.

Preserving Chung Cake after Tet
Storing cakes in the refrigerator: Many families do not have the habit of storing cakes in the refrigerator because they are afraid that the cakes will quickly become hard and stale (also known as rice spoilage). However, due to the hot and humid weather in our country, and the Tet holiday is often sunny, the cakes will quickly become moldy. All moldy foods produce aflatoxin. This toxin can have adverse effects on humans over a long period of time accumulating aflatoxin from food. Therefore, banh chung should be stored in the refrigerator at a temperature of 5-10 degrees Celsius.
When arranging banh chung in the refrigerator, be very careful not to tear the leaves because it can cause mold to penetrate deep into the cake, causing local fermentation. During the process of preserving the cake, it is necessary to check regularly. If you see mold on the cake (white or green mold patches), you need to treat it immediately by heating the cake over the gas stove or boiling it again. The cake can be peeled and cut as needed in the refrigerator. The remaining unused part should be covered with plastic wrap to avoid leaving the cake exposed as it will quickly harden and the smell of food in the refrigerator will be absorbed and will not be delicious.
Use a microwave or steam before eating instead of frying the cake: Many families often deal with hard or moldy cakes by frying them again with oil. However, experts advise: each time you eat, your family should heat the cake in the microwave or steam it again. You should limit frying the cake because it increases the amount of fat (oil or grease) in your Tet diet - which is not good for your health, especially for people who are obese or have cardiovascular disease.
