To avoid the risk of food poisoning, people should limit consumption of foods processed by fermentation, pickling, and homemade canned foods that are not strictly controlled for quality and food safety and hygiene.
Doctor Khanh recommends that consumers should choose canned food products with clear origins and avoid eating when the can is swollen.
Since the beginning of 2023, there have been many cases of botulinum poisoning nationwide, including deaths. A typical case of poisoning occurred in Quang Nam in March, with 10 people hospitalized after eating pickled carp, of which one patient died.
In May 2023, Ho Chi Minh City also recorded 6 cases of botulinum poisoning, including 3 children and 3 adults who were hospitalized for treatment. 5 cases showed symptoms after eating bread with pork roll produced by a facility in Thu Duc City, and one case ate long-aged fish sauce.
According to Dr. Truong Huu Khanh, Vice President of the Ho Chi Minh City Infectious Diseases Association, botulinum toxin is produced by the bacteria Clostridium botulinum in an anaerobic environment (an environment lacking oxygen). Foods at risk of contamination are vegetables, tubers, fruits, meat, and fermented or canned seafood that do not meet food safety conditions.
When entering the body, botulinum toxin causes muscle paralysis, with a very high risk of death. Therefore, the victim needs to be given an antidote as soon as possible. Symptoms of this toxin include difficulty breathing and weakness in the limbs. The onset usually occurs from a few hours to 24 hours after eating.
Note, patients cannot receive first aid at home but need to be taken to the hospital as soon as symptoms appear, especially medical facilities with ventilators.
To prevent botulinum poisoning, the best way is for people to ensure food safety, avoid "strange" processed foods such as fermented foods, pickled foods, homemade canned foods, which are not strictly controlled in terms of quality and do not ensure food safety.
Botulinum is an anaerobic bacteria, the lack of oxygen in the environment makes it easy to grow in canned foods, therefore, Dr. Khanh recommends that if you see canned foods that are swollen or expired, people should absolutely not eat them.
