A new study has warned of the terrifying dangers of Bacillus cereus, which often exists in cold rice, old noodles... that you store in the refrigerator and then reheat to eat.


Fried rice made from leftover rice from previous meals can contain dangerous bacteria.

A study published in the journal Nature Microbiology found that Bacillus cereus (B.cereus) is a deadly bacteria that is not killed by the heat of a microwave oven when you heat food. It can survive on cooked rice products that have been stored for several days, on noodles, milk, spices, dried foods and vegetables. But the danger from cold pots of rice and old noodles that have been stored and then reheated is still greater.

Several deaths have been documented in a case study, a 20-year-old man in Belgium, who ate pasta with tomato sauce that had been cooked 5 days earlier, refrigerated, then reheated, left at room temperature for a while, and then eaten.

The young man died after suffering from severe diarrhoea, stomach pain and vomiting. Earlier, an 11-year-old boy died after eating days-old noodles and a 17-year-old man died after eating reheated spaghetti that had been stored for four days.

“The natural habitat of B.cereus is very wide, including soil, animals, insects, dust and plants,” researcher Anukriti Mathur from the Australian National University (AUN) told Science Alert. “They reproduce by using nutrients from food. Some strains of this bacteria are useful in creating probiotics, but others cause food poisoning.

B.cereus can cause serious complications such as sepsis and severe liver failure, especially in people with weakened immune systems, infants, the elderly and pregnant women. Although death and severe complications are rare and most people infected with B.cereus when eating cold rice or old noodles only suffer mild poisoning, it is still necessary to be careful with it."

According to Dr. Mathur, some B. cereus toxins are actually difficult to destroy at the temperature of the microwave you use to heat food.

In 2019, a study from Langone University in New York (USA) also found that every year 63,000 Americans suffer from "fried rice syndrome", which means being infected with B.cereus when eating fried rice.
