Royal Golden Dragon Green Bean Cake of Hoang Giang Joint Stock Company (Hai Duong City) has been recognized as a national 5-star OCOP product. Let's see with your own eyes the process of making the first and only product of Hai Duong that meets the national 5-star OCOP standard.

In Vietnam, there are many places that make green bean cakes, but when mentioning this type of cake, people often immediately think of Hai Duong.

The Royal Golden Dragon green bean cake product of Hoang Giang Joint Stock Company (Hai Duong City) has been recognized as a national 5-star OCOP product. This is the first and only product of Hai Duong to meet the national 5-star OCOP standard.

The process of making green bean cakes of Hoang Giang Joint Stock Company in particular and Hai Duong green bean cakes in general is not too complicated but requires family secrets and especially meticulousness in each stage.

The representative of the Royal Golden Dragon green bean cake brand said that although no stage can be underestimated, the selection of input materials is very important, determining the quality as well as the color and flavor of the product.

Raw beans with large diameter (about 4 mm) are cleaned, boiled until reaching a certain expansion, then roasted in a pan at a temperature above 1,000 degrees Celsius.

When reaching maximum expansion and a certain fluffiness, the beans are incubated in wooden barrels for 24-36 hours before being hulled.

The beans are then ground by machine. Experienced mung bean cake makers say that today, using a grinding machine can produce super-fine flour. The finer the flour, the more fragrant it is, something that could not be achieved with a stone mill in the past.

Finely ground bean powder is mixed with two other ingredients including sugar and vegetable oil. Using vegetable oil instead of animal fat as before also extends the shelf life of the product (about 6-9 months instead of 3 months) because vegetable oil is less likely to seep into the cake crust.

After mixing the ingredients, the cake is packaged into finished products. Nowadays, most of the steps are performed on automatic lines to increase product productivity, hygiene and save labor and effort.

Having been involved in making green bean cakes for nearly 10 years, Ms. Nguyen Ngoc Khanh (in Hai Tan ward, Hai Duong city) shared: “This job brings a stable income and a clean working environment. Especially every time we travel and see our hometown’s green bean cakes being sold all over the country, we feel very happy and proud.”
