The ham making profession of Mr. Tran Duc Binh's family in Cam La village, Dong Lac commune (Nam Sach) originated from the ham making village of Uoc Le (Hanoi) which is famous nationwide. With more than 50 years of experience in the profession, for Mr. Binh, what helps the establishment maintain its reputation is delicious products and dedicated workers.

According to Mr. Binh, the process of making pork roll is elaborate and elaborate, from the stage of choosing pork, mixing meat to the technique of wrapping and steaming the roll. The pork used to make the roll must be from the buttocks, fresh and hot because this is the part of the meat that has high adhesion, firmness and aroma. The meat is filtered to remove tendons and fat and then put into the grinder. During the grinding process, spices such as good fish sauce, pepper, etc. will be added.

Choosing fish sauce is also very important because it will enhance the aroma of the pork roll. After grinding, the next step is wrapping and steaming. Currently, Mr. Binh has used modern machinery for the grinding and steaming steps, freeing up labor, making the production and processing of pork roll less difficult.

However, according to Mr. Binh, even with the support of machines, the worker still has to apply experience, dexterity, sophistication, and regularly observe each step and each stage of processing to "watch" the time properly. Whether the product is guaranteed in quality and deliciousness or not depends on the recipe and secret in the processing, creating unique flavors.

A delicious ham when cut into slices has a light pink color, smooth, slightly moist pieces, the surface of the slices has many small holes, is crispy and fragrant.

Currently, Mr. Binh's facility produces about 60-70 kg of ham every day, mainly consumed in the provincial market. Mr. Binh's facility is creating regular jobs for about 5 workers. In 2022, his family's ham was recognized as a 3-star OCOP product. Mr. Binh said: "Since being recognized as an OCOP product, I have actively brought ham products to participate in trade promotion fairs both inside and outside the province whenever possible. This is an opportunity to promote and introduce my family's ham products. Thanks to that, many people have known about my family's products, and the number of customers is also larger than before."

Realizing the effectiveness of the "One Commune One Product" (OCOP) Program, in 2023, Mr. Binh chose to add sausage products to participate in this program.
