If you want to give as gifts or make luxurious dishes, you should choose large, thick dried squid that is caught by hook. If you want to use it for stir-fries or snacks, you should choose medium or small dried squid.

The sweet and fragrant dried squid when grilled is a favorite dish of many people, some people are even "addicted" to the point of craving every time they think of it. Especially in the summer, when drinking beer to quench their thirst, there is nothing better than grilled dried squid. However, not all dried squid are delicious, and when buying dried squid, whether to choose big or small ones is still a frequently asked question.

When buying dried squid, should you choose big or small ones?

There is no general standard for the size of dried squid, but it can be divided into three main types: large dried squid, medium dried squid and small dried squid. Large dried squid is 8 to 10 pieces/kg in size, has thick and sweet meat, and is more expensive than other types. Medium dried squid is 14 to 16 pieces/kg in size, has moderate meat and is reasonably priced. Small dried squid, also known as mini dried squid, is 20 pieces/kg or more in size, and is often used as snacks or stir-fries.

The two main types of squid used to dry squid are tube squid and cuttlefish. Dried tube squid has soft meat and a naturally sweet taste, while dried cuttlefish is very hard. The grilled squid we often eat is tube squid.

Large dried squid usually has thick meat, when grilled or processed, it will have a richer flavor and be sweeter than small dried squid. Large dried squid retains its natural sweetness and has a firm texture, suitable for those who like the feeling of natural sweetness and toughness. Large dried squid is usually made from large squid, about 30-40cm in size, dried immediately after catching to preserve the flavor and freshness.

Small dried squid has thinner meat, when processed it will give a "lighter" flavor than large squid. This type is easier to eat, absorbs spices more easily, suitable for snacks or stir-fries. Small dried squid is usually made from small cuttlefish or squid, about 10-20cm in size, and is also dried immediately after catching to preserve the flavor.

Although cuttlefish are cheaper, it is the squid that really makes for a unique dining experience. Squid that are around 28-33cm long are considered the best quality.

So when buying dried squid, should you choose large or small ones? The answer depends on your needs and preferences. If you want to give as gifts or make luxurious dishes, you should choose large, thick dried squid that is caught by hook. If you want to use it for stir-fries or snacks, you should choose medium or small dried squid. Large dried squid that is dried right on the boat has a higher sweetness than small dried squid.

According to the advice of coastal people and gourmets, you should choose squid with thick meat and straight body. Dried squid with natural sweetness and rich flavor is the top choice.

Tips for buying quality dried squid

To choose delicious and quality dried squid, you need to pay attention to the following factors:

- Color: Choose squid that is light pink, not dark or moldy. Quality dried squid usually has a natural color, without signs of chemicals or colorants.

- Powder layer on dried squid: Good dried squid must have a layer of white powder covering the entire body, the thicker the better. This layer of powder is created by the natural drying process, helping to preserve and enhance the flavor of the dried squid. If the dried squid does not have a layer of powder or the powder layer falls off easily, it is of poor quality.

- Dryness: Quality squid must have moderate moisture, not too dry and not too wet. When you touch the squid, you can feel its elasticity and suppleness.

Small dried squid is usually made from cuttlefish or small cuttlefish, so the meat is thinner and of lower quality, suitable for snacks or stir-fries.

- Fragrance: Good dried squid will have a natural fragrance, without any strange or burnt smell. The smell of dried squid is usually light and pleasant, not causing an unpleasant feeling when smelled.

- Thickness of squid: You should choose to buy dried squid with straight body and thick meat. The thicker the dried squid meat, the more fluffy, delicious, flavorful and easy to tear when grilled.

- Origin: Choose squid from reputable and branded suppliers to ensure quality and food safety.

How to preserve dried squid

If you plan to use the dried squid within a short period of time, you can store it at room temperature in a cool, dry place. Keep the dried squid in an airtight bag or container to protect it from air and insects. Check the dried squid regularly to make sure it is not moldy or spoiled.

If you want to preserve it for a long time, you should put the squid in the freezer. Before storing, wrap the squid in foil or a sealed nylon bag to prevent the squid from drying out or losing its flavor. When you want to use it, just defrost the squid at room temperature or in the refrigerator.
