Different from the luxury and sophistication of traditional salty dishes, vegetarian dishes are not only frugal but also affordable for many people in difficult economic situations.

Ms. Hoang Anh, living in District 5, Ho Chi Minh City, said that every year she prepares the Tet offerings herself, but this year she decided to order them because of the reasonable price and convenience. After surveying the market, she chose to order two vegetarian offerings for the 1st and 4th with a total cost of only 800,000 VND.

"This decision not only saves time but also reduces preparation pressure," said Ms. Hoang Anh.

Similarly, Ms. Dung’s family in Hanoi has also switched to vegetarian dishes for Tet. She said she ordered the dishes 15 days before Tet to avoid overload. Her family is not too large and has a habit of eating vegetarian, so she feels that vegetarian dishes are both suitable for her taste and cost-effective. In addition, this choice also helps her reduce worries on the busy first day of the year.

Ms. Thanh, the owner of a vegetarian catering establishment in Cau Giay, Hanoi, said that this year the demand for vegetarian trays has doubled compared to the same period last year. She and her team have been focusing entirely on preparing the trays since December 25 to meet customer demand. The vegetarian trays are designed at affordable prices, targeting the mass market segment. By using simple ingredients such as vegetables, mushrooms, and tofu, costs are optimized while still ensuring diversity and appeal in the menu.

In Ho Chi Minh City, many establishments have also recorded changes in people's consumption habits. A representative of Hoa Cat Tuong vegetarian kitchen said that this year, the trend of tightening spending has caused many people to switch to ordering vegetarian trays. The tray sets here cost between 300,000 - 400,000 VND, including four to six dishes, meeting the needs of small families.

Many stores said that this year's prices for feasts are stable, even slightly reduced to stimulate demand.

Not only focusing on price, many establishments have also improved their menus to suit the trend of healthy eating. Instead of fake vegetarian dishes imitating chicken, fish or shrimp, this year's vegetarian dishes use natural ingredients, helping the dishes retain a light flavor. This creates great attraction for customers who want to enjoy traditional flavors without spending too much money.

Meanwhile, the price of savory dishes this year is recorded at a higher level. A full savory dish including six to eight dishes such as boiled chicken, fried spring rolls, banh chung and gio cha costs between 1.5 and 2.5 million VND. Many consumers said that the price has increased compared to last year, largely due to the high cost of raw materials and transportation.

Home delivery services have also contributed to the increasing popularity of vegetarian dishes. Customers only need to choose the menu, set a delivery time and wait for the dish to be brought. The dishes are usually kept warm, ensuring the quality as if they were just cooked, or just need to be reheated before eating.
