How to make spicy and sour kimchi pork soup that is eye-catching, delicious and nutritious is an interesting suggestion for family meals on cold winter days.

Spicy and sour kimchi pork soup originates from Korea, so you can find the ingredients and spices in supermarkets or Korean stores.
2. How to make kimchi and pork soup
Step 1: Prepare the ingredients
Pour kimchi into a bowl, you can choose any type of kimchi you like: cabbage kimchi, radish kimchi, mixed kimchi.
- Tofu should be young tofu, the best is tofu from Mo village, this type of tofu is often richer, smoother, pour the tofu onto a plate, cut into bite-sized pieces.
- Wash and slice the onion diagonally.
- Wash green onions, remove roots, chop finely.
- Cut off the roots of the enoki mushrooms, soak them in diluted salt water for about 10 minutes, then rinse several times and drain.
- To make a delicious dish like kimchi pork soup, choose the pork belly with lean and fat mixed evenly, rub with a little salt to clean and remove odor, then rinse many times under running water, drain and cut into bite-sized pieces.
Step 2: Prepare kimchi and pork soup
- Place the pan on the stove, add 15 ml of olive oil and heat it up, then add the shallots and saute until fragrant, then add the meat and stir quickly.
- Stir-fry until the meat is firm and rare, then add kimchi and stir-fry for about 15 seconds over medium heat, then add 200 ml of filtered water, 40 g of gochujang chili, 1 teaspoon of salt, stir gently to dissolve the spices, add a little fish sauce + seasoning to taste.
- Turn the heat up to high, boil the water then add enoki mushrooms and stir-fry until cooked.
- Then gently drop the tofu and crack 1 egg into the pot, remember to reduce the heat, the boiling water will cause the egg to break.
- Simmer for about 3 - 5 minutes (depending on how well done you like your eggs, I like my eggs runny so I don't cook for too long).
- Finally, you should taste it one last time to make sure it's to your taste, then sprinkle chopped green onions on top, stir a few more times, then turn off the heat and scoop into a bowl.
